Fa La La La Arugala Salad

Ingredients:

  • 5oz arugula

  • 6oz crumbled feta

  • 1 white onion

  • 2 cups fresh cranberries

  • olive oil

  • 1 tbs unsalted butter

  • 2 lemons

  • a pinch of pepper

Directions:

  1. Peel and dice white onion.

  2. Place a saucepan on medium heat.

  3. Add 2 tbs of olive oil and 1 tbs of butter to the pan, then once the butter has melted, add the diced onion.

  4. Stir regularly until the onion is golden.

  5. Mix in 2 cups of cranberries and 1 tbs of white sugar.

  6. Cook until the onion and cranberry have a jam-like texture (you may have to reduce the heat to prevent burning).

  7. Let sit to cool.

  8. Once cool, mix arugula, feta and jam in a large salad bowl and toss together.

  9. For the dressing: mix a 1/2 cup of olive oil with the juice of 2 lemons and add fresh cracked pepper to taste.
