Fa La La La Arugala Salad
Ingredients:
5oz arugula
6oz crumbled feta
1 white onion
2 cups fresh cranberries
olive oil
1 tbs unsalted butter
2 lemons
a pinch of pepper
Directions:
Peel and dice white onion.
Place a saucepan on medium heat.
Add 2 tbs of olive oil and 1 tbs of butter to the pan, then once the butter has melted, add the diced onion.
Stir regularly until the onion is golden.
Mix in 2 cups of cranberries and 1 tbs of white sugar.
Cook until the onion and cranberry have a jam-like texture (you may have to reduce the heat to prevent burning).
Let sit to cool.
Once cool, mix arugula, feta and jam in a large salad bowl and toss together.
For the dressing: mix a 1/2 cup of olive oil with the juice of 2 lemons and add fresh cracked pepper to taste.
