Pork Cutlet in Milanese Sauce with Shallot & Thyme Polenta

Pork Cutlet Ingredients:

  • 4 pork cutlets

  • 1 diced white onion

  • 2 tomatoes diced

  • 2 cloves of garlic crushed

  • 4oz of white wine

  • 2 tbs of olive oil

  • Spice of your liking (paprika, peppercorn, cumin, chili pepper…)

Directions:

  1. In a pan put the olive oil, onion and tomato until it begins to reduce.

  2. Add the garlic, wine and the spice of your choosing and let it reduce.

  3. When almost all of the liquid is evaporated, put in your pork cutlets and cook them for 4 minutes on each side.

Polenta Ingredients:

  • 1 cup of polenta

  • ½ cup of sodium free vegetable broth

  • 4 shallots thinly diced

  • 2 tbs of olive oil

  • Thyme

Directions:

  1. In a small pot, put 1 tbs of olive oil with the shallots until they become glazed.

  2. Add the broth and bring it to a boil.

  3. Pour the polenta slowly while you keep stirring.

  4. Lower the fire under the pot, add the thyme and the second tbs of olive oil.

  5. Keep stirring until the polenta does not attach the side of the pot anymore (6-7 minutes).
